3 Easy No-Cook Recipes for the Lazy Vegetarian

Easy No-Cook Recipes

I’ve been a vegetarian for just under two months and I’m loving it – my skin is clearer, I’m drinking more water, and I sleep better. But as someone who already didn’t enjoy cooking, switching to a diet that more or less precludes microwavable meals means that I have to step up my game in the kitchen. Luckily, being a vegetarian actually lends itself to being a lazy cook because it doesn’t necessarily require actual cooking. Below are three of my favorite things to make that don’t require any actual cooking, meaning they can all be made in ten minutes or less.

The Veggie Wrap

This is my favorite go-to meal because it takes less than five minutes and is delicious. Basically, I take whatever veggies I have in the kitchen and toss them onto a tortilla wrap, throw in some feta, and add some balsamic vinaigrette. For me, this is usually spinach, cucumber, tomatoes, and mushrooms, but I’m flexible.

Quinoa-Everything

I really like quinoa, even though I had no idea how to pronounce it until two months ago. It’s great as a side or a filler. Technically, you have to heat up quinoa but because you can do it in the microwave, I’m sticking this in with the no-cook ideas. So what to do with quinoa? Well, sometimes I throw it into my veggie wrap, sometimes I use it as the lettuce in a salad, and sometimes I use it as a side. My favorite thing to do, however, is to throw it into a giant portobello mushroom cap with some sliced avocado. It fits perfectly inside the sandwich tupperware containers and keeps pretty well, so it’s easy to use up the 3-pack of mushrooms.

Gazpacho

I don’t cook a lot of things, but I do make a mean gazpach. All you need to do is throw togetner some tomato juice and chopped celery, tomatoes, cucumbers, bell peppers, onions, and garlic and toss it in the refrigerator. I also have these handy tupperware bowls with lids to store them in and because gazpacho tastes better after sitting for a while, it’s a great thing to make on a Sunday and eat for lunch throughout the week.
